Description

Banana, chocolate and peanut butter. How can you go wrong? These are soft, sweet and peanut buttery. To die for!

Ingredients

  • CUPCAKE
  • 1-½ cup Ripe Banana, Mashed
  • ½ cups Sugar
  • ¼ cups Light Brown Sugar, Packed
  • ½ cups Unsalted Butter, melted
  • ¼ cups Milk
  • 1 whole Egg
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Instant Espresso Coffee
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • ½ cups Semi-Sweet Chocolate Chips
  • FROSTING
  • 1 cup Powder Sugar
  • ¾ cups Creamy Peanut Butter
  • ¼ cups Unsalted Butter, Room Temperature
  • ¼ teaspoons Vanilla Extract
  • 4 teaspoons Whipping Cream

Preparation

CUPCAKE

Preheat the oven to 350 degrees F. Spray a 12 cup pan muffin with non-stick cooking spray. In a medium bowl stir together the bananas, sugars, butter, milk, and egg. Set aside.

In another medium bowl whisk together the flour, espresso, baking soda, and salt together. Make a well in the center of the flour bowl. Pour the wet ingredients into the well and stir until just combined. Fold in the chocolate.

Divide the batter among the muffin pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Cool the muffins in the pan for 15 minutes before removing. Then finishing cooling on a wire rack.

FROSTING

Put powdered sugar and next 3 ingredients in medium bowl. Using electric mixer, beat until mixture is smooth, adding whipping cream by teaspoonfuls.

Pipe the frosting in swirls over top of cupcakes. Sprinkle with chocolate shavings or chocolate sprinkles.

I made this tonight for my international students. They don’t really love super sweet and they LOVED these …

The cupcakes weren’t hyper sweet and the peanut butter icing balanced it off perfectly. As the anti-thesis of Martha Stewart, I spread the icing on when it was 90% cool and it spread magically.

A definite do again! You’ll love it!

I can’t wait to try these! Peanut butter and coffee are two of my all-time FAVORITE flavors! Peanut butter frosting that actually tastes peanut buttery tends to be thick…but it is always worth it!

great cupcakes, but the icing is a little hard to handle. also, i liked the icing with more vanilla. thanks!

The cupcakes were great, (I didn’t use the espresso as I did not have any), moist, & flavorful. They took an extra 5-7 minutes baking time for me. The icing on these cupcakes, by itself is heavenly, although it is very hard to pipe/spread. When you add it to the cupcake neither one shines as much as they did by themselves. Maybe the espresso would have helped tie them together? I won’t make these again without making some changes. Possibly peanut butter chips subbed for the chocolate chips, or chocolate icing instead of the pb.

I felt there was far too much salt in the batter, so next time I’ll cut that in half. Otherwise– it’s wonderful! The banana and coffee flavors were great together, and the peanut butter frosting too. Just a very tasty dessert. I cut the recipe in half and baked it in two 4″ pans for a miniature layer cake.

I used the frosting recipe to dress up a chocolate cake box mix. For a 2 layer cake, I doubled the recipe and had to use quite a bit more milk to make it spreadable, but it was delicious. Just the right amount of peanut butter and so creamy!!!

I LOOOVED these cupcakes!! And so did my hubby, which is saying a lot because he doesn’t like sweets, and he really doesn’t like adventurous sweets. So I had him try one before I told him what was in it and he said it was “DELICIOUS!”

Then I told him what it was, and he said that if I’d told him I’d made some freako banana bread cupcakes, he wouldn’t have tried them…so he was glad I didn’t tell first, cause he loves ‘em.

YAY!

Also, I didn’t have a problem with the frosting at all….

These cupcakes were a big hit, incredibly moist. The icing took a bit of work, but tasted fab! Can’t wait to make them again!
