This is a simple breakfast casserole that can be thrown together in minutes. I sometimes serve this for supper.
Grease a 9 x 13″ pan with spray oil. Place hash brown patties on bottom. Place ham on top of hash browns. Mix together eggs, milk, dry mustard, cheddar cheese and jalapeños, if desired. Gently pour over top of hash brown patties and ham. Spread items evenly around.
Cover and bake for 350º for 30 minutes. Remove foil and bake an additional 30 minutes.
This recipe can be cut in half and made in a 7 x 11″ pan.
Note: You can add mushrooms, onion, green peppers, etc., in place of jalapeños, if desired.

So easy! Great for weekend guests or a simple dinner. I look forward to trying different variations – bacon instead of ham, addition of onions & peppers…endless possibilities.
Wondering if you could prep this the night before and pop into the oven in the AM? Any thoughts on this?

I made this for dinner the other night…or brinner as we like to call ‘breakfast for dinner’. Guess what? Are you ready for this…? My whiny, I can’t eat anything without scrunching up my nose, picky lil’ eater LOVED it. I about fell over. The rest of us loved it too! (obviously, I left out the jalapenos which would have put the picky one into a tailspin ended only by eating captain crunch for dinner)

mmmm…. I love the sound of this! I’m going to try it one evening… think it might be a bit heavy for breakfast for us on the tropical side of the world, but sounds great for dinner!
