Description

Quick and easy soup that comes together fast, makes the house smell great and has the family lining up with bowls in hand.

Ingredients

  • 2 cans (15 Oz. Size) Kidney Beans, Rinsed
  • 2 cans (15 Oz. Size) Black Beans, Rinsed
  • 1 can (15 Oz. Size) Sweet Corn
  • 1 can (14 Oz. Size) Petit Diced Tomatoes
  • 1 can Green Chilies, 4 Ounce Can
  • 1 whole Small Onion
  • 1 whole Green Pepper
  • 1 whole Yellow Or Orange Pepper
  • 1 pound Ground Beef Or Sausage
  • 1 package Taco Seasoning, 1 Ounce Packet

Preparation

Empty each can into a large stock pot. Be sure to rinse the beans first. Add enough water to cover all ingredients and add 1/2 of the taco seasoning package.

Simmer on low while you start browning the ground beef in a large skillet.

Dice peppers and onions.

Saute peppers & onions. Add to ground beef after it is completely cooked. Add 1/4 Cup of water and the remaining taco seasoning to skillet. Let this all simmer together for five minutes or so.

Add beef mixture to stock pot. Add a little more water if you need to, just enough to cover all ingredients.

Let soup simmer on low for 30-45 minutes. This will get all the flavors blended and get everybody’s tummies rumbling!

Serve with shredded cheddar cheese, sour cream, and tortilla chips of choice.

*If you plan ahead, you can use dry beans, soaked the night before. Make adjustments according to your family’s tastes – more onions, less peppers, etc.

*This is our traditional meal before Halloween trick-or-treating.
