Description

Individual meatloaf servings, perfect for a picnic or school lunch!

Ingredients

  • 1 pound Ground Beef
  • ½ cups Chopped Red Onion
  • 3 cloves Garlic, Minced
  • ½ cups Plain Breadcrumbs
  • 1 Tablespoon Dried Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ¼ cups Worcestershire Sauce
  • 1 whole Large Egg
  • 8 strips Bacon (Half The Number Of Strips If Bacon Is Really Thick)

Preparation

Preheat oven to 400°F. Lightly grease the bottoms of a muffin pan with olive oil.

Using your hands, combine all ingredients except bacon in a medium bowl.

Line the side of the muffin cups with the bacon slices. If your bacon is thick, only use half a slice for each muffin cup.

Take small handfuls of meat and place it in the muffin cups, patting it down to fill in any gaps. If any bacon sticks out on top, fold it over the meat.

Bake at 400°F for 20 minutes, or until a knife inserted in the middle comes out clean and the meat is no longer pink. Let cool 5 minutes, then use a spoon to carefully remove the mini loaves to serve.
