Tender steak, savory broth, crisp peppers and juicy tomatoes. This was my mom’s recipe and she had it on our regular dinner rotation. A great family recipe for over 40 years.
Pour 1/4 cup of soy sauce and the sugar over sliced steak. Marinate for at least 30 minutes.
Heat olive oil in a large skillet over medium to medium-high heat. Add minced garlic and ginger. Saute 1 minute. Add sliced steak and saute for 8 to 10 minutes. Add peppers, reduce heat and cook on medium low for 10 to 15 minutes.
Blend 2 tablespoons cornstarch and the remaining 1/4 cup soy sauce in a 1- cup measuring cup. Add enough water to measure 1 cup. Add this slurry mixture to the meat. Then add tomatoes and stir gently. Cook 2 minutes until the sauce thickens a bit. Serve over rice!
