Description

This inexpensive meal comes together in a flash! Even when something a little more complicated is on the menu, my husband insists that I make this.

Ingredients

  • 1 pound Lean Ground Beef
  • 1 whole Small Onion, Chopped
  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • ⅓ cups Frozen Corn
  • 1 package Taco Seasoning, 1 Ounce Packet
  • ¾ cups Salsa
  • 5 whole Corn Tortillas, Cut Into Thin Strips
  • ½ cups Shredded Cheese

Preparation

In a large skillet, brown beef and onion together. Drain, return to skillet and add black beans and corn, followed by the seasoning packet and salsa. Stir to combine and add corn tortilla strips, stirring around to incorporate. Sprinkle the cheese over the top of the skillet and allow it to melt. To serve, top portions with shredded lettuce, sour cream and hot sauce, if preferred.

I made this and it turned out wonderfully! I threw it all together in my cast iron skillet on the stovetop, and then after topping it with the cheese, put it under the broiler until the cheese started melting. Yeeuumm!
