A vegetarian take on the traditional Japanese maguro-don (tuna rice bowl) with avocado, mango, and a sweet and savory sauce over steamed rice.
1. Whisk together the lime juice, lemon curd, soy sauce, water, lime zest, and ginger in a medium-size bowl.
2. Add the chopped avocado and mango and toss to coat in the sauce.
3. Separate the rice into two bowls and top with the avocado mango mixture. Serve immediately.

What a unique recipe. I make lemon curd and am always looking for ways to use it….also, this is a great idea for use when mangos go on sale. Looks delicious!
