A truly healthy dessert.
Mangoes are in season right now and they are so fragrant and delicious! They are high in vitamins C and A—great antioxidants! And they make you feel like you are in the tropics while adding to your daily servings of fruits. Can’t beat that!
In a large food processor, combine mango slices and peppermint leaves. Process until a smooth puree is formed. Transfer to a large bowl and add water, coconut milk, lime juice and sugar.
Transfer mixture into a 9×13 glass or metal baking dish. Place in the freezer for 3 hours. Each hour, whisk the mixture, making sure to incorporate the frozen edges. Prior to serving, mash with a fork and stir evenly. Spoon mixture into glasses and enjoy!
