Description

Who would’ve thought that a tin foil dinner could be so good! The meat is super tender and the vegetables are full of flavor.

Ingredients

  • 1 pound Hamburger Meat (80/20)
  • 1 Tablespoon McCormick Steak Seasoning
  • Salt And Black Pepper To Taste
  • 2 whole Potatoes
  • 1 whole Small White Onion
  • 1 whole Medium Zucchini
  • 1 Tablespoon Olive Oil
  • 1 package Hidden Valley Ranch Dressing Dry Seasoning (1 Oz)
  • 8 pieces Tin Foil (about 1 1/2-2 Foot Pieces)

Preparation

Season the meat with the steak seasonings and salt and pepper. Separate the meat into fourths and set aside on a plate or your work surface. (So about 1/4 pound of meat will go into each piece of foil).

Next, peel and slice the potatoes into thin slices. Slice the onion into thin strips too. Wash the zucchini and slice into 1/4″ thick pieces.

Take the veggies and drizzle them with the olive oil. Place them into a large bag along with the Hidden Valley Ranch packet and give them a good shake till all the veggies are well coated with the seasoning and oil.

Take 2 pieces of foil for each dinner and lay one on top of the other creating a ‘plus’ symbol. Place 1/4 pound of the meat onto all 4 of the foils. Measure out the vegetables so each dinner gets equal amounts. Now just layer the seasoned vegetables on top of the meat. Wrap the foil up tightly and place them onto a baking sheet.

Bake at 350F for 1 hour to an hour and 15 minutes.

Looks yummy! I can’t eat red meat but I think if I substitute ground turkey it will still come out great!

We make these all the time when we are camping!

Quick tip… to cook them over an open fire (the absolute best way), soak some newspaper in water and wrap each bundle in 2-3 sheets of paper – then another layer of foil. Place in the coals and turn about every 15 minutes. Works great on the BBQ too!

Put the potatoes on the bottom and then the meat and then the veg. That way the potatoes are sure to cook properly (and the might even brown up and crisp a bit on the edges… yum!!).

Even better, put out all the ingredients (add carrots, peppers, mushrooms, corn, etc… to the available veg) and let everyone build their own!

And throw in a couple slices of left over, cooked bacon from breakfast!!

My mom used to make these, and only after I’d grown up did she tell me we always had them at the end of the month because the groceries were getting low! She didn’t use Ranch dressing (in fact, it was so long ago that I’m guessing it hadn’t even been invented yet! :-) ).
This is still in my menu rotation, and we have it about once a month. Lost my Mom two years ago this weekend, and I may just be making them real soon.

these were pretty good. i love the concept and i did enjoy them as written…but i think next time i’ll spice them up with some other seasonings and veg. thanks for the great idea and recipe!
