These have such a delicate gingerbread flavor – they are perfect for a little something special during the holidays (or really anytime).

We love these pancakes! I just am making my first batch for Fall. Love the fact that the recipe is perfect for two-three.

Oh, yum. These taste just like gingerbread. What a wonderful way to kick off the fall season! Since I don’t have any maple syrup, I added a tiny bit of splenda to the batter, and they were perfect right off the pan–a little spicy, not too sweet, absolutely delicious. Thank you for this recipe!!

I’d never thought of that – that might be a good way to pull these into the spring without seeming like I’m trying to channel Christmas…excellent!

Ooh – these would be yummy with lemon curd or a lemon syrup.
