Description

I love this Italian-tyle Red Quinoa Artichoke salad. I fell in love with quinoa a few years ago and have just started combining quinoa and artichoke hearts.

Artichokes contain approximately one fourth of an average sized adults fiber needs, are naturally fat free and very low in calories, and are rich in vitamin C, potassium, folic acid and magnesium.

This tasty salad will be a great side to your summer barbeques.

Ingredients

  • 1 cup Cooked Red Or White Quinoa, Chilled
  • 1 cup Zucchini, Sliced
  • 1 cup Marinated Artichoke Hearts, Cut In Half
  • 1 cup English Cucumber, Sliced
  • 1 cup Carrots, Sliced Or Julianned
  • 2 whole Roma Tomatoes, Sliced
  • ½ cups Sliced Olives
  • ½ cups Pearl Onions
  • ⅛ Tablespoons Dill
  • ½ cups Sliced Green Peppers
  • Italian Dressing, To Taste

Preparation

Place all ingredients in a mixing bowl and toss together lightly. Toss with Italian Dressing and chill for an hour to allow flavors to blend.

This is such a versatile recipe. I’ve made many variations of this recipe. You can increase veggie amounts, add different veggies like fresh mushrooms, cold peas, or try adding chopped chicken or tuna. It’ll be a hit however you make it.

This is a great salad! Here’s a little tip: Using a dry italian seasoning packet to make the dressing instead of pre-made salad dressing makes a huge difference…..I think gives it more of an authentic taste. Thanks for the recipe :)

This is delicious! I made it for company and we all really enjoyed it, I will be making this often this summer with my garden fresh produce!!
