Description

These chocolatey chewy cookies somehow are even better with a little salt on top!

Ingredients

  • ½ cups Butter
  • 2 cups All-purpose Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Kosher Salt
  • ¾ cups Dutch Processed Cocoa Powder
  • 1-½ cup Sugar
  • ½ cups Light Brown Sugar, Packed
  • 1 teaspoon Vanilla Extract
  • ⅔ cups Buttermilk
  • ½ teaspoons Instant Coffee Dissolved Into 1 Teaspoon Of Water
  • 2 cups Milk Chocolate Chips
  • 36 pinches Fleur Del Sel

Preparation

In a small saucepan, melt the butter over medium heat. Cook the butter, stirring occasionally, until brown bits form at the bottom of the pan. Remove from heat and allow to cool slightly. Go make your breakfast, read the paper, have some coffee or something of those sorts.

Preheat the oven to 350ºF. Line two baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking soda and salt. Set aside for a moment.

In a large bowl, combine the browned butter (still slightly warm) with cocoa powder and whisk until very smooth. Whisk in sugars, vanilla extract, buttermilk and coffee. Gradually stir in the flour mixture until no streaks of flour remain. Stir in the chocolate chips.

Drop dough in 1-inch balls onto prepared baking sheet, leaving about two inches between cookies to allow for spreading. Sprinkle the cookies with fleur de sel.

Bake for 10-12 minutes, until cookies are set around the edges. Cool for 2-3 minutes on a baking sheet, then transfer to a wire rack with a spatula to cool completely. Oh baby, these are amazing hot, warm, you name it.

I read that you can ‘make’ dutch processed cocoa, by starting with Hershey’s cocoa and adding a pinch of baking soda to every 3 Tablespoons of cocoa.

I made these cookies last night (with the modified Hershey’s cocoa) and the taste was wonderful. I’ll have to try the ‘real’ dutch processed cocoa in this recipe to see what the difference is.

If you look at the ingredients in your cocoa powder and there are other ingredients besides cocoa then it is probably dutch processed cocoa powder. I think it was Fine Cooking that said the cocoa beans were washed in a potassium rinse to rid of the acidity. But with these cookies I think it would be okay to use natural but it wouldn’t be the exact same results in texture.

And I just used instant coffee so that I could use more coffee flavour with less liquid. I’m sure you could use a couple teaspoons of espresso or really strong coffee in its place.

Oh and as for fleur de sel, regular sea salt or even a bit of kosher salt would be great. I had a hard time finding fleur de sel and when I did it was in a food specialty store.

My husband salts the top of chocolate chip cookies when he makes them and they are the best chocolate chip cookies I have ever had. I can’t wait to try these!

Is there a particular reason for the coffee being instant, or will regular brewed coffee work just as well?

Most grocery stores don’t carry dutched cocoa (sometimes you can find a Hershey’s version that is half dutched, half natural). I get mine at a local coop. If all else fails, you should be able to use regular cocoa. You just won’t get quite the depth of flavor you’d get with dutch-processed cocoa.

Absolutely delicious! I left out the coffee, but otherwise kept the recipe the same. These are amazing even after they’ve been frozen!

Oh wow!! These are amazing. I didn’t have milk chocolate chips, but my daughter and I wanted to make them anyway, so we used semi-sweet. So, so good! And, no eggs, so feel free to indulge in eating cookie dough. Definitely a keeper!!

I made these this afternoon, and replaced 1/2 cup of the chocolate chips with diced candied orange peel. Delicious!!! I am trying to force myself to stay away from them and out of the kitchen!
