Perfect fluffy waffles for lazy Sunday mornings! There is a bit of maple syrup that makes these good enough to eat plain!
Preheat your waffle iron (if you have one like mine, set it to the middle “crisp” option, and then adjust from there). Beat eggs until fluffy, about double in size. Beat in the remaining ingredients until the batter is well combined and nice and fluffy. You WANT it to be airy.
Spray your preheated waffle iron with nonstick spray. Pour about 1/3 cup batter onto the waffle iron, adjusting to your individual iron, until the batter barely covers the raised waffle indentations. Close and cook until the waffles are golden brown. Serve with your choice of condiments.

I made these this weekend for brunch and they were delicious! I did let the batter set for about an hour and I think that helped add to the fluffiness. Certainly will be putting them into the regular waffle rotation.
