A zesty twist on traditional stuffed peppers. The whole family loved them!!
Preheat oven to 350F.
Cut tops off peppers, remove seeds and membranes. Boil in salted boiling water for 4 minutes. Remove into an ice bath, then drain upside down on paper towels.
Brown beef with chopped onions and peppers. Add 3/4 packet of fajita seasoning mix.
Prepare Rice-a-Roni according to package directions, except add remainder of fajita seasoning when adding the enclosed flavor packet (add that too).
Combine beef mixture and rice in a bowl. Stuff peppers and stand in a baking dish. Top each pepper with 1 Tbsp shredded cheese.
Add 1/2 inch water to baking pan. Bake for 40 minutes.

I found your recipe while looking for inspiration. I have some extra peppers, and some chili – think I will combine the chili with cooked rice, stuff the peppers and top with mexican shredded cheese (all in my frig this very minute!)

Thank you for the inspiration. I had 4 bell peppers that I was going to eat with hummus. Publix had a two for one Chi-Chis taco meat on sale. I added Spanish rice, a can of black beans and some olives to it and topped with shredded cheese. I had forgotten how much I liked stuffed peppers and I didn’t make them because they seemed like a lot of trouble. You made it seem easy, down and dirty. Thanks.

really good dish…not sure i loved the fajita seasoning, might try something different next time, but overall very good!
