I was in need of a quick, casual meal that could be made of the hodge-podge of things I had in my pantry. This is what I came up with and man was this good!
Preheat oven to 350ºF.
Brown the ground beef, drain off grease, and add taco seasoning and water and cook till ready.
While meat is cooking, cover a baking sheet with foil (this will make cleanup a snap) and spread chips into a single layer. In a medium bowl combine black beans, corn and chilies; get them really mixed together!
When the meat is finished, pour it over the top of the chips and spread out evenly. Then top with the corn, bean and chile mixture. Finish off with the cheese (I used a Mexican mix) and pop into the oven for 8 to 10 minutes. You’ll want the cheese nice and melted!
Once you’ve plated your serving of nachos, top it off with a dollop of sour cream and whatever other fixings you like. Black olives and salsa would be delicious!
Note: Instead of baking, you could use the broiler instead, just make sure to keep an eye of the cheese so it doesn’t burn.
***I haven’t used the “scoop” style chips but I don’t think they’d work as well.
