A traditional meatloaf with a zesty twist!
Saute diced mushrooms, onion, and bell pepper until soft. Combine sauteed veggies with ground beef, crumbs, egg, salt, and pepper. Thoroughly combine all ingredients. Transfer meat mixture to a large baking pan and form into a loaf.
In a small bowl, combine ketchup and balsamic vinegar. Brush this mixture generously over the entire surface of the meatloaf.
Bake in a 350ºF oven for 45–50 minutes.

This looks so delicious, I look forward to making this very soon. I like the combination of ketchup and balsamic…yum.
