Description

A hearty chili packed with sweet potatoes, black beans and smoky chipotle peppers with a little bit of fire.

Ingredients

  • 1 pound Sweet Potatoes, Peeled And Cubed Into 1/2 Inch Dice
  • 2 Tablespoons Extra-virgin Olive Oil, Divided
  • 1 whole Onion, Medium Dice
  • 2 cloves Garlic, Rough Chopped
  • 1 Tablespoon Ground Chili Pepper
  • 2 teaspoons Ground Cumin
  • 1 teaspoon Ground Chipotle Pepper Powder
  • 1 cup Dark Beer
  • 1 can 28 Oz Can Whole Tomatoes
  • 2 whole Chipotle Peppers In Adobo Sauce, Chopped
  • ½ cups Barbecue Sauce
  • 2 Tablespoons Worcestershire Sauce
  • 1 Tablespoon Red Hot Sauce (more If Desired)
  • 1-½ cup Frozen Corn
  • 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
  • 2 cups Crushed Tortilla Chips, If Desired
  • Salt And Pepper, to taste

Preparation

Preheat oven to 350 degrees F. Place sweet potatoes on a rimmed baking sheet or jelly roll pan and toss with one tablespoon of olive oil. Season with salt and pepper as desired and bake for approximately 8–10 minutes or until sweet potatoes are just tender.

Heat a deep heavy pot over medium heat and add the remaining olive oil. Sauté the onions until lightly caramelized. Add the garlic, chili powder, chipotle powder and cumin and cook for an additional minute or until spices are fragrant. Stir them frequently so they don’t burn at the bottom of the pan.

Deglaze the pan with the beer and scrape up any browned bits (these are called fond and they’re full of flavor) from the bottom of the pan. Add the tomatoes, chipotle peppers, barbecue sauce, Worcestershire sauce and hot sauce.

Simmer the chili for about 15-20 minutes or until it begins to thicken slightly. Add the corn, beans, sweet potatoes, salt and pepper to taste.

Serve in a bowl topped with crushed tortilla chips, if desired.

Made this after searching high and low for the chipotle peppers in adobo sauce. It was SO good! But, wow, it was hot. I had a hard time eating it. Not sure I’d even use those peppers next time, but I will definitely make again. The heat just needs to be adjusted for our family :) Loved the roasted sweet potatoes!

Yum!!! Made this with a few modifications due to missing ingredients and it turned out great. The potatoes were a little firm, so we tossed it all in the crockpot and let it continue to mellow. The flavor just continued to develop. Hard to believe how satisfying a vegetarian dish can be to country folk who are used to meat! ;0)

I thought this was really tasty. Admittedly, I didn’t have all the ingredients on hand (ground chili pepper and ground chipotle powder), but I added extra chipotles and hot sauce. I also only used 1/4 c barbecue sauce upon request. Even with my changes, it was really good!

I made this exactly as written, it has wonderful flavor but was a little spicy for us. I made another batch omitting the chipotles and then mixed the two batches together and it was just right for us!! We are not usually wimpy about the heat, we keep a bottle of hot sauce on the table at all times, maybe the chipotles I used were bigger or hotter than normal?

This was great, husband & son both loved it. I cubed up 2 chicken breasts, sprinkled them with chili powder & cooked them up in the oil first before the onions. Just hot enough & good flavor.

This is pretty spicy- a good thing in my book, but beware if you don’t have the tolerance, you should cut back on some of the hot stuff. I enjoyed it, will probably make it again.

This chili is awesome! I made it once last fall and am planning to make it again on Friday for a Chili Lunch for Charity at work!

Very tasty but very spicy and I like heat in my food. If I make it again I will do 1/2 the adobo chili, 1/2 the chipotle chili powder and 1/2 the hot sauce. I also added 3 chicken breasts to it.

Awesome flavor! We had to adjust for some missing ingredients, and we ended up dumping it all in the crockpot to soften up the sweet potatoes, but that just intensified the flavor. Great dish! We will make it again!
