If you like curry you will love this. Along with the veggies and white rice, it makes for a delicious meal!
In a wok or large fry pan, on medium heat, brown the ground beef and green onions together.
In a small bowl, mix together the lemon juice, brown sugar and duck sauce then set aside.
Once the ground beef is browned, add the mushrooms, zucchini and asparagus. Stir fry for 4 minutes. Add curry paste and stir for 1 minute. Then add the coconut milk and stir to combine. Let the dish simmer for 10 minutes then add the duck sauce mixture and simmer another 5 minutes. Garnish with cilantro. Serve over rice and enjoy!
