This was my late mother-in-law’s meatloaf recipe and the only meatloaf my sons will eat. It’s really great the day you make it and even better the next day for sandwiches! I usually serve it with brown gravy, mashed potatoes and green beans.
Preheat oven to 350ºF.
Combine all of the ingredients except bacon in a large mixing bowl until well incorporated. Shape into a loaf and place it in a greased 9×13 pan. Top meatloaf with bacon strips.
Bake at 350ºF for 1 to 1-1/2 hours (depending on your oven) or until juices run clear. Remove from oven. Allow to stand for about 10 minutes before slicing.
