Not your typical taco salad but oh so tasty and fun to create. Put all your toppings in bowls and let your kids and your guests have fun putting together their own favorite meal.
Brown beef over medium heat. Once fully browned, drain it of excess fat. Add packet of taco seasoning to the meat (whichever one is your favorite or you can make your own). Add the amount of water specified on the package of seasoning. Let water reduce until the beef mixture is thick and the flavors melded. Turn off heat.
Crush a handful (or more) of Doritos and place on plate. Next layer with a little of the taco beef mixture. Then add whatever toppings you prefer, kidney beans, shredded lettuce, cheese, tomatoes, sour cream, etc. Then lightly drizzle with Catalina dressing.
This is great to double to feed a large crowd. Would be wonderful as a taco salad bar!
Cook’s Note: Some other toppings include: salsa, pinto beans, olives or jalapenos.

Have been making this taco salad since I as a pre-teen. No longer use nacho flavored chips though. I use plain instead. We mix each serving in a bowl and add the Catalina. Another way to try it is with no dressing but salsa instead. Don’t forget the onions though. This is stuff is great.

jamie – you can absolutely use French dressing too. It tastes a little different than Catalina (but not a whole lot to truly make a difference).

My pastor’s wife does something similar with French dressing (is that the same as Catalina?) and it’s to die for!

I’m going to have to try and put this together sometime this week! It looks so good! Even though I’d have to cut it down to feed one person
