Hearty vegetable soup recipe from my mom, tweaked by me and loved by my family.
Throw everything into a large crockpot. Add enough water to get to 1/2 inch from the top of the pot. Cook on low setting for 6-10 hours depending on how soon you want to eat it.
Note: Joe’s Stuff is from the New Orleans Cooking School. It gives the soup a little spice and punch. If you don’t have it, use your favorite Cajun seasoning.
