Quick and delicious fajitas. I make these on busy weekday nights after work when there’s no time to start up the pit, and I’ve got a long night of study ahead.
1. Preheat oven to 475 degrees (F).
2. Spray a large oven-safe skillet with Pam (a light coat of oil is fine too) and heat on high.
3. Cut the raw fajita steak into 2 pieces (just to fit into the skillet with plenty of room around).
4. Place a pat of butter for each piece of fajita into the pan, after melting place a piece of fajita over each pat.
5. Sear without moving for 2 minutes.
6. Flip each piece of fajita, melting a pat of butter under each first, and sear for another 2 minutes.
7. Place the remaining pats of butter on top of the fajita pieces and place the skillet into the oven for 6 minutes.
8. Remove the pan from the oven and let the meat rest for about 3 to 5 minutes.
9. Slice fajitas across the grain, and enjoy with your favorite fajita garnishes and tortillas!
