Description

An amazing concoction of Italian meats, spices and cheese topped off with roasted veggies. Use this recipe as a base, and try adding Italian olives, peppers, pickled garlic, and other cheeses as the mood strikes (or your pantry allows)!

This meatloaf is easier to make than it looks, and will garner rave reviews from all fortunate enough to eat it!

Ingredients

  • 1 pound Ground Beef
  • ½ pounds Italian Sausage, Ground
  • 1 Tablespoon Finely Minced Onion
  • 2 cloves Finely Minced Garlic
  • 1 Tablespoon Butter, Softened
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • ½ cups Shredded Parmesan Cheese, Divided
  • ¼ cups Shredded Mozzarella Cheese
  • 1 ounce, weight Pepperoni, Diced
  • 1 ounce, weight Hard Salami, Diced
  • 5 whole Potatoes
  • 4 whole Carrots
  • 1 Tablespoon Olive Oil
  • 1 cup Water
  • 1 teaspoon Beef Bouillon

Preparation

1.) Finely mince the onion and garlic. Rough chop the pepperoni and salami.

2.) In a large bowl use your hands to mix the ground beef, sausage, onion, garlic, butter, oregano, basil and a few tablespoons Parmesan cheese. Add salt and pepper to taste. Avoid packing the meat together or it will become tough.

3.) On a piece of waxed paper about 9″ X 13″, place the meat mixture and gently pat out to 1″ thickness, using your hands.

4.) On top of the meat, sprinkle the remaining Parmesan, mozzarella, pepperoni and hard salami. If you like, add any other ingredients you’d like. Leave about 1″ of the meat mixture on one end un-filled. (You’ll use this space to seal the meatloaf roll.)

5.) Carefully roll the meat, peeling it away from the waxed paper. Be sure to roll towards the bare end. You don’t need to compact the meat, just pull up on the waxed paper and allow the meat to roll over itself. It will form a pretty rolled loaf. Don’t worry if a bit of the filling spills out the ends.

6.) Seal the seam and the edges of the roll.

7.) Peal and chop the potatoes and carrots. Aim for bite sized pieces.

8.) Grease a 9 x 13 pan with olive oil and set the meatloaf roll in the pan, seal down. Sprinkle potatoes and carrots around the loaf.

9.) Heat water and mix with bouillon. Pour over the veggies. If you’d like, feel free to pour a little wine over them, too.

10.) Bake, covered with foil, at 400 degrees (F) for 30 minutes. Remove the foil and bake for 10 minute more or until meat is cooked through.

11.) Serve with pasta and a little marinara with your favorite wine! yum!
