There’s just something so warm and comforting about beans and rice, and done right, you rarely need anything else to complete the meal. This Simple Black Beans and Rice from Bev is one of those “done right” versions. Plus, she uses Jasmine rice, which scores all kinds of extra points in my book.

a recipe called butter dip biscuits that was a disaster!!!!!! butter overflowed onto the bottom of my oven and filled the whole house with smoke!! the biscuits got thrown out to the birds and i have a container of buttermilk in my fridge now that i need to find a use for ugh!

The last thing I cooked was sauteed zuccini, squash and onions. Bean and cheese tostadas was last nights dinner not sure what is on the menu for the next few days.

We had amazing salads last night, of baby spinach, romaine, blue cheese, and a new cheese we have tried called Dubliner. It has quickly become our favorite! Salads were topped with sauteed Italian herbed chicken, sunflower seeds and crasins and dressed with ranch dressing.

I’ve got nothing against Jasmine rice – I love rice is all shapes, lengths & colors. But I would challenge you to try aromatic rice from Louisiana, specifically Creole Rose Rice and not just because the farm is owned by some of my second cousins. It is truly delicious and your kitchen will smell divine are cooking some up.
