When I spotted this soup from misspfui months ago for our Grilled Cheese theme post, I thought to myself that it looked so pretty and sounded so delicious that it just may be the tomato soup that upstages the sandwich. Which is quite a tall order since, well, grilled cheese is pretty much a rock star in the sandwich world.
The salsa verde ingredient list is what really intrigues me here, and while the flavor combination may strike you as unusual, I have to say that imagining all those tastes thrown together makes my mouth water.
I think this’ll also make an excellent light lunch to take to work, along with a simple sandwich or a nice salad. If you’re worried about the fresh garlic in the salsa verde, you can always roast it ahead of time to make it less pungent.
Check out misspfui’s other equally beautiful recipes in her Tasty Kitchen recipe box. She also shares not just recipes but beautiful photographs in her blog i am zoe, named after her adorable dog. While you’re there, try to resist pinching the cheeks of your monitor when you see the photos of her little girl. My goodness, that’s one cute baby.
Enjoy the weekend, everyone!

I made this soup over the weekend and when I ate it, I felt like I’d died and gone to tomato soup heaven. Thanks for the delicious and simple recipe. The salsa verde topping was the absolute bomb.

Thanks for the lovely post, Erika!
But don’t roast the garlic – the fresh garlic makes you smell a wee bit bad (maybe), but it’s sooooo good…
And you showing my blog here made me notice that I really hadn’t posted anything there in a while.
Cheers from Finland,
misspfui

Yum, that looks great. I’ve made tomato soup a number of times, but never thought to put salsa verde with it. What a good idea!
