Description

A delicious bread that is soft, moist and full of fall flavor, without the gluten!

Ingredients

  • 1-¼ cup Gluten-free All-purpose Flour
  • ¼ cups Almond Flour
  • ⅔ cups Brown Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 dash Salt
  • 1-½ Tablespoon GF Pumpkin Pie Seasoning
  • 2 Tablespoons Canola Oil
  • 2 whole Large Eggs
  • 2 Tablespoons Honey
  • 2 Tablespoons Pear Juice
  • 1 Tablespoon Gluten Free Almond Extract
  • 2 Tablespoons Unsweetened Applesauce
  • 1 cup Pumpkin Puree
  • ⅔ cups Chopped Pears

Preparation

Preheat oven to 350ºF. Grease a loaf pan with nonstick cooking spray and set aside.

In a large bowl, mix together the flours, sugar, baking powder, baking soda, salt and pumpkin pie seasoning. Add oil, eggs, honey, pear juice, almond extract, applesauce, and pumpkin puree and mix well. Stir in pears.

Pour mixture into the prepared loaf pan. Bake for 45–52 minutes or until golden brown. Let cool slightly and serve.

i have a question: if I would like to make this bread (which, i would b/c it sounds and looks wonderful) and I prefer to use whole wheat pastry flour do you think i can use this 1:1 in place of the flours called for here?? thanks!
