Description

These no-bake Double Chocolate Protein Bars with Coconut and Pecans are packed with oats, puffed rice, fruit, nuts, protein powder and chocolate! They are a cinch to make and give you a boost to get through the day!

Ingredients

  • ½ cups Honey
  • ½ cups Coconut Oil
  • 3 Tablespoons Protein Powder (Myofusion Brand Is Gluten Free)
  • 2 Tablespoons Dark Chocolate Cocoa Powder
  • 1 cup Gluten Free Old Fashioned Oats
  • 1 cup Gluten-free Rice Krispies
  • ½ cups Shredded Coconut
  • ⅓ cups Chopped Pecans
  • ⅓ cups Chocolate Chips

Preparation

In a medium size mixing bowl combine the honey and coconut oil. Microwave for 45 seconds until the oil has melted. Add the protein powder and cocoa powder and stir well.

Add the oats, rice, coconut, pecans, and chocolate chips until well combined.

Line an 8×8 pan with foil, allowing the foil to hang over pan edges, and spray foil with cooking oil.

Add the granola mixture to the pan and spread it evenly. Using your spatula press the mixture down into the pan (the tighter the mixture is the less likely your bars are to fall apart).

Place bars in the freezer to set for 15-20 minutes. Turn bars out onto a cutting board, carefully remove foil and slice into bars. Keep cold.
