Description

If you love Olive Garden’s Zuppa Toscana soup, this tastes just like it. It’s an easy soup and always a hit!

Ingredients

  • 1 pound Spicy Italian Sausage, Crumbled
  • ½ pounds Smoked Bacon, Chopped When Uncooked
  • 1 quart Water
  • 2 cans (14.5 Ounce) Chicken Broth
  • 2 whole Large Russet Potatoes, Scrubbed Clean And Sliced About 1/3" Thick
  • 2 whole Garlic Cloves, Peeled And Crushed
  • 1 whole Medium Onion, Chopped
  • 2 cups Kale Or Swiss Chard, Chopped
  • 1 cup Heavy Whipping Cream

Preparation

On medium-high heat, brown sausage; drain and set aside. On medium-high again, brown bacon; drain and set aside.

Place water, broth, potatoes, garlic, onion in pot and simmer until potatoes are tender.

Add cooked sausage and bacon, simmer 10 minutes. Add kale and cream, season with salt and pepper, and heat through.

Low carb version: substitute cauliflower for potatoes. It has the same taste!

I made this for dinner tonight – using the cauliflower as suggested. I also omitted the cream because I’m cooking for someone who is lactose intolerant. It was EXCELLENT! I’ll be making this again very soon. So flavorful and comforting. Thank you for sharing the recipe!

I’ve made this several times now and everyone loves it! I always use cauliflower and either omit the cream or use half & half. Whatever I do to the recipe, it’s always yummy!

I guess now that I’ve fixed this twice I should review. This soup was my first try using Kale in any form and we liked the results enough to do it again. Also, used cauliflower: probably will never make it with ‘taters both due to taste and low-carb. Used fat free half-half (now there’s an oxymoron for ya) and the taste was just fine that way.

Oh my word! This is even better than OG’s! Followed the recipe except for the bacon. I used homemade jalapeno sausage instead and it had plenty of flavor.
You must make this soup!
