Ingredients

  • 28 ounces, weight Crushed Tomatoes
  • 28 ounces, weight Chopped Tomatoes (fresh Or Canned)
  • 14 ounces, fluid Chicken Broth (Use A 14.5 Oz. Can))
  • 18 sprigs Fresh Basil Leaves, Minced
  • 1 Tablespoon Sugar
  • 1-⅓ cup Whipping Cream
  • ½ cups Butter Or Margarine

Preparation

In a saucepan, bring tomatoes and broth to a boil. Reduce heat; cover and simmer for 10 minutes. Add basil and sugar. Reduce heat to low. Stir in cream and butter. Cook on low heat until butter is melted.

This was fantastic! I’ve very picky about my tomato soups (hate regular tomato soup, only like some tomato basil soups), and this was perfect!

OH man. That was great soup. I added 1 tablespoon of minced garlic while the tomatoes and broth were cooking, but otherwise followed the directions. I was very impressed at how tasty this easy to make soup is.
