Description

This is a super easy, super rich and delicious soup I often make for my sister’s restaurant. With only five (that’s right, five!) ingredients, this is a crowd pleaser every time. Enjoy!

Ingredients

  • 4 cans (14.5 Oz. Can) Diced Tomatoes
  • 16 ounces, fluid Tomato Juice
  • 4 slices Cooked, Crumbled Bacon
  • 1 cup Shredded Smoked Gouda Cheese
  • 1 cup Heavy Cream

Preparation

Combine diced tomatoes and juice, let simmer for 20 minutes.

Add in bacon and smoked gouda cheese. Remove pot from heat and—you will need to use an immersion blender in this step—blend all ingredients together until smooth.

Allow to cool slightly, then add heavy cream. Stir to combine.

Enjoy!

This was a great and easy soup! I couldn’t find my immersion blender so I just ran the tomatoes through the blender before putting them in the pot. I didn’t get rid of all bits though, like the previous reviewer, I like a bit of texture.

Very tomato-y but great! My immersion blender didn’t quite get all the chunks ground up (could be the husband operating the blender…) but I think that gave it a little something extra by way of texture. Way better than your average tomato soup – a grilled gouda sandwich on crusty bread would have been the perfect pairing!

Also, I used half & half and I think that worked perfectly in place of the cream.

Being a fan of Campbell’s Tomato Soup, I never felt the need to make tomato soup myself. But I am glad I tried this!
It was fast and easy as well as delicious (all three of my favorite adjectives when it comes to recipes!)
I used a blender and liked the consistency pureed thoroughly. The smoky flavor from both the cheese and bacon is pronounced…well worth the added effort of opening more than one can!
Add a crusty loaf of bread and there is no need to make a grilled cheese sandwich!
