Yum! I bumped up the vegetables by adding red peppers, snow peas and a few potatoes (must get those five servings in a day!), I also used chicken stock instead of water, it was very good. thank you for sharing.

This is a great soup. Because other users thought the amount of water was a bit much, I started with 1 cup and I liked it that way. I used roasted red peppers instead of tomatoes since I didn’t have any on hand, and as suggested, added brown rice. Oh so good!

This soup is so delicious, I’ve made it twice in one week! I also ended up using chicken stock–I just used 2 cans of stock and 2 cans of light coconut milk. I also used 1 pint of grape tomatoes because they were cheaper and I served it with some Jasmine rice. I can’t wait to heat up leftovers for lunch!

I’ve made this several times and always a little bit differently but primarily true to the written recipe. I really like adding spinach and replaced the chicken with shrimp one time with great success! Thank you!

Everyone loved this soup! I made a few changes based on other recipes. (chicken broth instead of water, added bamboo shoots, tofu, lemongrass, eggplant, green onions and thai peppers). I wanted more veggies. Thanks for the great recipe. I will be making this again tomorrow and try adding some carrots.

This is quite tasty! I used brown sugar instead of white, and found it just right. The broth is thin, but that didn’t stop me from eating every bit of it!

This soup is amazing! I use 4 cups of chicken broth instead of the 6 cups of water, and will usually throw in some extras–rice, veggies, etc. I also prefer to use cherry tomatoes (halved) instead of the wedges & since we love cilantro, that’s what we always use!

Loved this soup! ate it with brown rice at the bottom of the bowl. Also read the reviews and went light on the water. I diced my tomatoes really fine because husband doesn’t like them. he didn’t notice at all. Next time i might add a tad more coconut milk. I also used left over rotisserie chicken. Made this soup in a minute. So easy!

I made this tonight. This afternoon I saw this and already had two chicken breast thawing so thought why not. I went to the store for coconut milk. It was easy to make, though I think 6 cups of water is a bit much, made it really watery and I kinda like soups a little thicker. It tasted wonderful except for the tomatoes. I love tomatoes but I didn’t think they went with the soup. The broth flavor was wonderful, the coconut milk was subtle and it was so smooth. I used both tomatoe wedges and cheery tomatoes to see which one worked my friend said dont use tomatoes again so that is settled. I would make this again but sitting around the table we discussed and thought rice added would be good, and shrimp would be just as nice as well. I will freeze the broth after taking out the tomatoes and thaw and add the other items down the road. Thanks, it is a wonderful conversational soup and really adds something new to my old humdrum favorites. Annette

My favorite Thai place closed several months ago, and I lost my favorite soup. I’ve been thinking about making this lately, and coincidentally I saw this recipe. What perfect timing! I can’t wait to try it.

OH. MY. OHMYOHMYOHMYOHMYOHMY….This is SO yummy! I just got done eating my second bowl. Even my husband had seconds! I followed the recipe exactly except one thing – I used cilantro instead of basil. Because I heart cilantro! Oh, I also used a little less sugar. I actually wish I had tasted it before adding the sugar, because I ended up putting a little more soy sauce on top of my bowl. I think the next time I make it I’ll leave out the sugar altogether.

Thanks you guys for the comments. The beauty of this soup is you can adjust it to just how you like. I loved the idea of shrimp and rice. Also I use cilantro instead of basil a lot since it’s cheaper and more readily available in my neck of the woods. But when I have basil it is my go to herb! I think I like cheery better than cherry anyday

This is my favorite soup of all time. Very nostalgic. I come from a thai-food loving family from Austin. I will try your version!
