Description

Split pea soup with ham, potatoes and carrots.

Ingredients

  • 1 package Green Or Yellow Split Peas
  • 1 whole Onion, Diced
  • 2 cups Diced Ham Or Ham Chunks
  • 2 whole Carrots, Peeled And Diced
  • 1 whole Large Potato (cubed)
  • 1 stalk Celery, Diced

Preparation

Rinse split peas well, and remove any bad peas or small pebbles that may have made it through processing. Put the rinsed peas in a large pot and cover with at least 2-1/2 inches of water. Put on the burner on med- high heat, and dice up at least half of a medium sized onion. Add the onion to the pot. Salt the water, and let them cook.

After they’ve cooked for a while – at least an hour – throw in your ham.

While your soup is cooking, dice up your vegetables and set aside. When the peas are just about how you like them (I prefer my split pea soup very thick and the peas indistinguishable), toss in the remaining veggies and continue to cook.

Salt and pepper as desired. Great with fresh bread and butter on a cold winter day.
