Description

A deliciously hearty vegetarian soup.

Ingredients

  • 3 whole Carrots, Diced
  • 2 whole Zucchinis, Cut Up
  • 1 whole Onion, Diced
  • 3 whole Celery Sticks, Chopped
  • 1 cup Green Beans
  • 3 cloves Garlic, Minced
  • 1 can 10 Oz. Of Garbanzo Beans
  • 1 pound Cooked Lentils
  • 1 can 28 Oz. Of Tomatoes
  • 4 cups Vegetable Broth
  • 1 teaspoon Curry
  • ½ teaspoons Cumin
  • ½ teaspoons Garam Masala
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • 6 ounces, weight Cooked Noodles

Preparation

Add all the ingredients to your slow cooker with the exception of the cooked noodles.

Cook on high for 3-4 hours or low for 4-6 hours. Add in your cooked noodles just before serving.

Note: Veggie and bean choices are flexible with this dish! Use whatever you have on hand and it will be delicious!
