Description

Even better than the way it tastes? The way it makes your house smell all day! This recipe makes a lot, but the soup is even better the next day. Great for lunch all week. Can be made vegetarian by omitting sausage and using vegetable stock!

Ingredients

  • 1 teaspoon Olive Oil
  • ½ pounds Sweet Italian Sausage
  • 6 whole Carrots, Peeled And Chopped
  • 4 stalks Celery, Chopped
  • 1 whole Large Onion, Chopped
  • 1 can (15 Oz. Can) White Beans, Drained And Rinsed
  • 1 can (15 Oz. Can) Kidney Beans, Drained And Rinsed
  • 1 can (28 Oz. Can) Diced Tomatoes
  • 6 sprigs Fresh Thyme
  • ½ teaspoons Dried Sage
  • 2 whole Bay Leaves, Dried
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 8 cups Chicken Broth
  • 2 cups Cooked Ditalini Pasta

Preparation

Heat the oil in a pan and brown the sausage. Add cooked sausage and all other ingredients except pasta to the slow cooker and cook on low for 7-8 hours. Approximately 30 minutes before you plan to serve, cook and add the pasta. Cover and cook (still on low) for 20-30 more minutes. Ladle the soup into bowls and serve with parmesan cheese sprinkled on top and crusty bread alongside.

Notes:

This soup is even better if you add a chunk of parmesan rind into the slow cooker with the rest of the ingredients at the beginning.

All ingredient amounts can be changed. Use what you have on hand, cut back on one veggie if you don’t like it, etc. If your slow cooker is smaller than mine (I feed armies, gaming groups, and my husband, all of whom eat a lot), cut down the amounts of the veggies, use just one kind of beans, use less broth and a little less pasta. Just make it fit. Soup isn’t an exact science; it’ll taste good no matter what you do.

I made this last weekend and it was awesome! Great flavors. The only glitch was that I couldn’t find ditalini in our store, but found a good substitute.

I made this last night and the whole house smelled wonderful I am having it for lunch. I got up about 5 and put the noodles in and cut it off about 7 we will be eating this the whole weekend.

Delish! I halved the recipe since it was only my husband and I eating it and we both had leftovers for lunch today. Can’t wait to make it again.

This soup was easy and hearty, a nice change from our usual dinners. However, it didn’t have the typical “minestrone” taste I was looking for.

Excellent, thanks for posting! I use 1 lb of spicy parmesan sausage but other than that, I make as written. Easy and delicious!

It was so nice to come home today and smell this yummy soup cooking in the crock pot! I substituted turkey sausage for pork sausage and added a few tablespoons of tomato paste to adjust for our tastes. Yummy and healthy recipe. Thanks!
