Description

This soup is incredibly easy to make and people will think you slaved away making it!

Ingredients

  • 1 can (14 Oz. Can) Low Sodium Chicken Broth
  • 2 cans (10.75 Oz. Can) Condensed Cream Of Chicken Soup
  • 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
  • 1 can (15 Oz. Can) Corn, Drained
  • 1 can (10 To 14 Oz. Can) Diced Tomatoes With Green Chilies, Not Drained
  • 1 can (4 Oz. Can) Green Chilies, Not Drained
  • 2 cups Cooked Chicken, Cubed
  • ½ teaspoons Cumin
  • ½ teaspoons Chili Powder
  • ½ cups Sour Cream (optional)

Preparation

Pour chicken broth and cream of chicken soup into a large saucepan or stock pot on medium heat.

Add rinsed black beans, corn, diced tomatoes, and green chilies, chicken, cumin and chili powder. Simmer until heated through.

Add the sour cream right before serving for a richer, creamier soup.

Serve with crumbled tortilla chips, chunked avocados, shredded cheddar cheese, more sour cream, cilantro or anything else you wish.

This recipe was great! I used frozen corn so I added a little water and I used canned chicken breast which made it all the easier.

This is my new favorite soup! It is wonderful. I am not a fan of green chilis so I left those out and substituted Diced Tomatoes with garlic and onion instead. It was great!!

Brilliant. I cooked the chicken in a skillet with butter, salt, and some pepper to add to the flavor later. Loved the idea of using cream of chicken soup to make the texture so smooth. Definitely could make it stretch by adding chicken broth, without losing any flavor! So tasty, and will definitely be making this again.

We made this for dinner last night and it was great! Quick, easy, delish. I added fresh cilantro, avocado, crispy tortilla strips, and cheese…. mmm….

This recipe was sooo delicious! It tastes like mexican chicken casserole in a soup form. So very easy & quick to make as well! I highly recommend this soup, have tortilla chips on hand to dip in it as well!
