A great soup for a cold winter day. This soup is super easy to make. One of our family’s favorites!
Brown the ground beef; drain excess grease. Put back in big pot along with the beans, Rotel (we usually use 1 can mild and 1 can medium, but use whatever spice level you like), and minestrone. Heat until bubbly and serve. Good with cheddar biscuits.
You could also cook your ground beef and then pour everything in the crockpot and cook on low. It will be ready when you get home from work!

This sounds great for a camping dish. I can have the cans on hand for an extra meal or if it rains and substitute in what ever meat we have. Thanks for the idea!
