Quick & Hearty Corn Chowder

Description
This soup is one that has evolved from a diet magazine. The diet wasn’t great and neither was the soup, until I got my hands on it and kicked things up a notch. It is no longer “diet” but it is a great solution for a busy weeknight and includes the kind of ingredients that you can keep on hand for an emergency. I also believe it is better the second day, but then, most soups are.
Ingredients
- 1 bag Fresh Shredded Hash Browns
- 1 bag Frozen Mixed Veggies (corn, Beans, Peas, Carrots)
- 1 can Creamed Corn
- 2 cans Chicken Broth (I Use Low Sodium Low Fat)
- 1 package Smoked Turkey Kielbasa (cut Into Bite-Sized Pieces)
- Grated Parmesan Cheese
- Black Pepper
Preparation
Dump all of the ingredients (except cheese and black pepper) into a large soup pot and simmer over medium heat until the potatoes have softened and the soup is heated through.
Finish each bowl with a sprinkling of Parmesan cheese and fresh black pepper.
