Description

Thicker than a soup but not quite a stew, this “stoup” is filled with perfectly soft peppers and onions plus creamy pumpkin that carries a hint of slightly spicy, yet smoky flavors from chipotles in adobo.

Ingredients

  • 1 whole Onion, Chopped
  • 1 whole Green Pepper, Chopped
  • 1 Tablespoon Olive Oil
  • Salt And Pepper
  • 1 clove Garlic, Chopped
  • 1 can (14 Oz. Size) Chopped Tomatoes
  • 2 whole Chipotle Peppers In Adobo, Chopped Small
  • 1 can (15 Oz. Size) Pumpkin
  • 2 cups Pinto Beans, Cooked Or Canned
  • 3 cups Water
  • Plain Greek Yogurt, To Serve (optional)

Preparation

1. Saute onion and green pepper in olive oil until soft, about 5-7 minutes, seasoning with salt and pepper. Then add chopped garlic and cook for another minute.
2. Add chopped tomatoes, chipotle peppers in adobo, canned pumpkin, pinto beans and water.
3. Stir and cover, simmering for 15-20 minutes so the flavors combine.
4. Serve, with plain Greek yogurt as a topping if you so desire!
