This yummy pumpkin soup is a perfect way to enjoy your favorite fall treat in a savory new way.
Brown the sausage in a large pot. Add the onion (chopped and diced) and one small can of green chilies, and sauté until onions start to brown.
Add in cumin, pumpkin, bay leaf and chicken broth, and let simmer for 20 minutes.
Remove the pot from heat and add in half-and-half. Stir until well combined.
Top with parmesan cheese and parsley (if desired), and enjoy!
