Description

A good hearty throw-together soup to warm you up on a chilly day. Even better the next day!

Ingredients

  • 1-½ pound Ground Beef Or Turkey
  • 1 whole Yellow Onion (small, Diced)
  • 2 cloves Garlic, Minced
  • 1 package Frozen Mixed Vegetables
  • 2 cans Diced Fire Roasted Tomatoes
  • 6 cups Water
  • 3 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Seasoning Salt
  • 1 Tablespoon Steak Seasoning
  • 2 envelopes Beef Broth Concentrate (Trader Joes)
  • 1 Tablespoon Heinz 57 Bold Sauce (with Worcestershire)
  • 8 ounces, weight Pasta Noodles

Preparation

In a dutch oven, combine ground beef and onion. Saute until meat is cooked through and onions are softened. Add garlic and frozen vegetables. Cook for another 5 minutes and then add all remaining ingredients except pasta.

Bring to a rolling boil, stiring occassionally and adjusting seasoning as needed. Cover and continue to boil for about 20 to 25 minutes. Add pasta and continue boiling on medium-high heat until pasta is tender and vegetables are soft.

Adjust seasoning before serving.

Note: I bought the beef broth concentrate from Trader Joe’s. If not available in your area, I think substituting 1 can of beef consomme would do the trick.

Seasonings were eyeballed, so you may need to adjust during cooking to suit your own tastes.
