Description

New Orleans’ favorite shrimp stew.

Ingredients

  • 2 Tablespoons Vegetable Oil
  • 1 whole Bell Pepper, Chopped
  • 1 whole Onion, Small, Chopped
  • 2 stalks Celery, Chopped
  • 3 cloves Garlic, Minced
  • 1 can (14 Oz. Size) Diced Tomatoes
  • 1 can (8 Oz. Size) Tomato Sauce
  • Hot Sauce, to taste
  • 1 teaspoon Sugar
  • Salt And Pepper Or Favorite Creole Seasoning To Taste
  • 2 pounds Shrimp, Peeled And Deveined
  • 2 cups Cooked Rice
  • 3  Green Onions, Chopped For Garnish

Preparation

In a medium-sized pot, heat oil. Add the pepper, onion, celery and garlic and cook until soft and translucent. Add tomatoes, tomato sauce, hot sauce, sugar, salt and pepper. Cook for 15 minutes or so, just to get all of the ingredients playing nice.

Add shrimp and stir to make sure the shrimp are covered in nicely with the sauce. Don’t overcook the shrimp or they will be little more than rubber balls. Take off the heat when your shrimp lose their opaque color.

Serve over rice and make pretty with sliced green onions. A nice loaf of French bread wouldn’t hurt! Enjoy!
