Description

If you’ve spent any time in New Mexico, you know the love of green chile. This stew is the perfect blend of comfort, warmth, and New Mexico all in one bite. Perfect served with homemade tortillas.

Ingredients

  • ½ pounds Lean Pork, 1/2-inch Cubes
  • 1 Tablespoon Flour
  • 1 Tablespoon Oil Or Fat Of Choice
  • 1 whole Potato, 1/2-inch Cubes
  • 1-½ cup Tomatoes, Chopped
  • ½ cups Green Chile, Roasted, Peeled, And Chopped
  • 2 cloves Garlic, Minced
  • ½ teaspoons New Mexican Red Chile Powder
  • 4 cups Chicken Stock
  • ½ teaspoons Ground Cumin

Preparation

Coat the pork with flour, then brown in oil/fat in a heavy pan. Add the remaining ingredients, bring to a boil, cover, then simmer for about 4 hours or until the meat is very tender.

Notes:
*Other meats can be substituted but pork is the most flavorful.
*The best green chile is fresh or frozen, but canned chile can be used in a pinch. Look for “Hatch” or “Bueno” brands – they’re the most flavorful.
*Cayenne can be substituted for red chile powder, but will not be as flavorful.
