Description

What a wonderful summer soup to make. No cooking involved. Very refreshing taste.

Ingredients

  • 2 cups Cucumber, Peeled, Seeded And Diced (1 Large)
  • 1 cup Red Onion, Finely Diced (1 Medium)
  • 2 cans 4.5-oz Each; Chopped Green Chilies, Undrained Or 2 Serrano Chilies, Finely Chopped (to Make It Raw)
  • 3 cans 14-5 Oz Each, Diced Tomatoes, Undrained OR 10 Peeled And Seeded Fresh Tomatoes (to Make It Raw)
  • ⅓ cups Fresh Lime Juice (about 4-5 Limes)
  • ½ cups Fresh Cilantro, Finely Chopped (about 1/2 Bunch)
  • 2 cups Chicken Broth (or Water To Make It Raw - Or Vegetable Broth To Make It Vegetarian)
  • ⅛ teaspoons Salt

Preparation

Combine all ingredients. Chill at least two hours.

I made this today and I am super happy with the results! I’ve searched for SO long for a gazpacho recipe that was chunky and not just pureed vegetables. Yum yum!
