Description

The easiest soup to make. A serious helping of vegetables, ground chicken or beef and rice.

Ingredients

  • 1 Tablespoon Butter
  • 1 pound Ground Beef, Chicken Or Turkey (your Choice)
  • 3 cups Water
  • 3 cups Chicken Broth
  • 1 can Tomatoes (14 Or 28 Ounce Can, Your Choice)
  • ⅓ cups Macaroni
  • ⅓ cups Rice
  • 3 whole Onions, Chopped
  • 3 whole Carrots, Chopped
  • 3 whole Celery Stalks, Chopped
  • 3 whole Potatoes, Diced
  • Salt And Pepper, to taste

Preparation

In a large pot, melt butter. Place meat in pot and cook over medium heat until browned.

Then, into the same pot add your water, chicken broth, tomatoes, macaroni and rice. Next, add your chopped veggies and salt and pepper to taste.

Increase heat and bring to a boil. Then reduce temperature to low and simmer for approximately an hour, or until the veggies are nice and tender.

I haven’t made this yet, and I’m not a cooking expert, but if it needs to simmer for an hour, I think the cook time should be at least an hour.

Overall, this was a good soup. However, I only used 2 potatoes and it seemed like too many, 1 was plenty of onion. I’d also use more macaroni and rice. Also, probably more than 8 servings! It made a lot. Quick and easy though, my 4 mitts is just because the amount of veggies made the amount of broth minimal.
