Description

Super simple and oh, so flavorful! If you can open a can, you can have this soup on the table in less than 30 minutes!

Ingredients

  • 8 ounces, weight Fresh Italian Sausage, Casings Removed
  • ½ cups Chopped Onion
  • 2 cans (14.5 Ounce Each) Chicken Broth
  • 1 can (14.5 Ounce) Diced Tomatoes With Roasted Garlic, Undrained
  • 1 can (15 Oz. Size) Cannellini Beans, Drained, Rinsed
  • 1 bag (9 Ounces) Baby Spinach Leaves

Preparation

Brown sausage with onions in a large saucepan over medium-high heat, stirring frequently to crumble sausage. Once sausage is browned, drain grease.

Add broth, tomatoes with their liquid and the beans; mix well. Cook 5 minutes, stirring occasionally.

Stir in spinach; cover saucepan with lid. Cook 5 minutes, or just until spinach is wilted, stirring occasionally.

Sometimes simpler is better! I enjoy cooking but often appreciate a meal that has simple ingredients and doesn’t require tons of prep or time to make. This one is going into my regular rotation, my husband said it was a keeper. Thanks for sharing the recipe! =)

The master behind this recipe is right – this is super simple but super delicious. I just made a big batch, and I look forward to eating through the rest of the week. I added in some garlic and some mushrooms (because I like them) and I also added some various spices (a little cumin, tyme, and basil, plus the occasional salt and pepper.) I also finished it off with a little freshly grated parmigian cheese. I feel like not of these things are necessary, but they all help enhance an already good recipe. Yumm.
