Set it and forget it!

Ingredients

  • 4 whole Medium Sweet Onions, Thinly Sliced
  • 3 cloves Garlic, Minced
  • 2 Tablespoons Brown Sugar
  • 4 Tablespoons Butter
  • ½ teaspoons Salt
  • 2 Tablespoons Balsamic Vinegar
  • 3 Tablespoons Flour
  • 8 ounces, fluid Beer
  • 64 ounces, fluid Low Sodium Beef Stock
  • 2 Tablespoons Fresh Thyme
  • ½ teaspoons Black Pepper
  • 1 whole Loaf Of French Bread
  • 8 slices Gruyere Cheese (or Cheese Of Your Choice)

Preparation

Set your crock pot on high, then add onions, garlic, brown sugar, butter, salt and balsamic and mix until combined. Cover and let cook on high for 60 minutes, stirring occasionally, until onions are a bit caramely and a few are brown along the edges. Most importantly, make sure the onions are soft. Add in flour, then stir thoroughly and let it sit for 5 minutes. Add in beer, beef stock, thyme, and pepper, then turn heat down to low, cover and cook for 6-8 hours.

Before serving, cut a loaf of French bread or baguette into slices. Fill soup bowls to the top, then cover with slice of bread and a slice of cheese. Set under the broiler for 2-3 minutes, or until cheese is bubbly and golden brown. Be careful when serving as bowls will be hot!

Note: I used a very low-sodium beef stock, so depending on the stock you use, add additional salt for flavor if desired.

This recipe is great, though the amount of onions could easily be reduced by about half. Since many of the previous reviews claimed the recipe lacked depth of flavor, I used a mix of beef consomme, beef broth, and beef stock. This recipe was super easy and my family loved it… will definitely make again!

I made this soup on Monday. I have a tad left for my honey for lunch, today. He is a big fan of French onion soup. I too, added bouillion and a pkg. of dried onion soup mix. Do love the crock pot idea

This is a great base recipe– but i found it needed more intense flavor– I added soy sauce, a beef buillion cube and worcestershire sauce for a bit more depth. With these small modifications, it was truly fabulous!

This was certainly easy enough to make, but my family did not go after the leftovers. I’d make it again — maybe try some red wine next time?
