Description

Beer Chili is simple and straightforward, with a dark yeasty note. The beer, masa and sausage elevate the flavor and round out the chili powder taste. The addition of red pepper, carrots and a touch of sugar bring a sweetness that balances the spice.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Red Onion, Chopped
  • 1 whole Red Pepper, Chopped
  • ¾ cups Chopped Carrot
  • 4 cloves Garlic, Minced
  • 1 pound Sirloin Steak, Diced
  • 1 pound Pork Sausage
  • 3 Tablespoons Masa (corn Flour)
  • 2 Tablespoons Ancho Chile Powder
  • 1-½ Tablespoon Cumin
  • 1 Tablespoon Dried Oregano
  • 1-½ teaspoon Kosher Salt
  • 2 Tablespoons Brown Sugar
  • 56 ounces, weight Crushed Tomatoes
  • 28 ounces, weight Canned Kidney Beans, Drained
  • 9 ounces, fluid Your Favorite Beer
  • ½ teaspoons Cayenne (optional)

Preparation

Heat the oil over medium-high heat. Add the onions, peppers, carrots and garlic and sauté for 5 minutes.

Next add the ground beef and sausage and cook until brown—8-10 minutes—breaking up all the meat clumps.

Add the masa, chile powder, cumin and oregano, cook another 3 minutes stirring regularly. Add the salt, sugar, tomatoes, beans, beer and scrape the bottom to deglaze.

Reduce and cook at least another 30 minutes—partially covered—until flavors are well combined and the chili has thickened. Stir occasionally.

Add a couple dashes of cayenne pepper for extra heat. Serve with your favorite toppings and tortilla chips or cornbread!

The flavors came together so well! I used ground chorizo for the sausage and also added some pancetta, so good! Definitely a good go to chili recipe.

Excellent taste, good seasonings and the masa….mmmmm. Quick to prepare and the only substitution I made was using 2 pounds of ground beef instead of using sausage which I did not have on hand.
