Comfort in a bowl. A quick and hearty soup full of shredded carrots, green onions, diced ham, cooked rice and half and half.
1. In a medium size saucepan cook green onions and carrots in butter to soften. Add flour and stir until thoroughly combined with butter.
2. Once the veggies have softened, slowly add chicken broth, stirring constantly to avoid lumps. Bring to a boil and simmer 2 minutes.
3. Add ham, rice, cream, salt and pepper. Heat through, but do not bring to a boil.

Amazing! It was 5pm and all I had was some left over ham in the fridge. Found this recipe, whipped it up in a half hour and was thrilled! Fantastic flavor, even my young kids loved it!! I also added some celery and a few pinches of parsley (and I used fat-free 1/2 & 1/2 for less calories!). Delish!

Made this with a carrot, celery, and onion base, heavy cream all the way and added a little parmesan to finish. Amazing.

This soup was simple to make and had alot of flavor! Will definately make this again! The family really enjoyed this recipe!
