Description

“Tomato based” soup with a kick…. or two! This is a very versatile soup that you can customize to your taste!

Ingredients

  • 1 pound Ground Beef
  • 3 whole Chili Peppers
  • 1 whole Red Onion
  • 3 whole Jalapenos
  • 4 cloves Garlic
  • 6 whole Tomatoes
  • 1-½ carton Stock, 26 Ounce Boxes
  • 1 Tablespoon Cumin
  • 1 Tablespoon Oregano
  • 1 Tablespoon Paprika
  • Optional Garnishes: Avocado Or Lime Slices, Tortilla Chips, Etc

Preparation

Step 1: Chop all of your veggies and garlic – jalapenos FIRST (you’ll thank me later).
Step 2: Brown your meat in a skillet over medium heat and once thoroughly browned, remove from heat and put aside.
Step 3: In the same pan you browned the meat in, throw in your veggies (peppers, onion, jalapenos, garlic). Cook them off until they are soft (but not too soft… ha, this is my scale: get a veggie on a wooden spoon and touch it… you want it to have shape and not fall apart when you touch it).
Step 4: Add back in the meat and chunks of tomato.
Step 5: Add the stock and spices. Give it a good sniff (prepare for the spices to open up your head, ha). Let ‘er simmer for about 45 minutes, stirring every 15 minutes (gotta give it time to soak a little).
Step 6: Now… Give ‘er a taste, check on the salt/pepper you may need to add some but don’t go too crazy.
Step 7: Serve it with lime, sea salt, and avocado. I was out of tortilla chips so I just crumbled up some hard taco shells.
