Description

Looking for something cheap, quick and easy on a Tuesday night that everyone will love? This soup is one of our family favorites!

Ingredients

  • 1 whole Onion, Chopped
  • 2 stalks Celery, Chopped
  • 2 cloves Garlic, Minced
  • 2 teaspoons Oregano Or Italian Seasoning
  • 1-½ teaspoon Cumin
  • 2 teaspoons Olive Oil
  • 32 ounces, fluid Chicken Or Vegetable Broth
  • 1 can Diced Tomatoes
  • 2 cans Black Beans, Drained And Rinsed
  • 2 Tablespoons Lime Juice
  • 1 dash Cayenne Pepper To Taste
  • 8 Tablespoons Sour Cream, To Taste, For Garnish
  • 8 ounces, weight Sharp Cheddar Cheese, To Taste, For Garnish

Preparation

1. In a large pot, saute onions, celery, garlic, oregano and cumin in olive oil until onions are browning and celery is crisp-tender.

2. Add chicken broth, tomatoes, black beans, lime juice and cayenne (if desired). Bring to a boil then reduce heat and allow to simmer for 20 minutes.

3. When serving, garnish each bowl with a dollop of sour cream and cheese. Soup will still be yummy without these additions but in our family, the tangy addition of the sour cream to the soup really kicks the flavor up!
